If you’ve seen Steel Magnolia’s (a thousand times) you know what I’m taking about.
Yesterday I made cherry pie filling from 20lbs of cherries that I got for $1.75 a pound from a local farm. The farm doesn’t grow them here in WY but they go get them in Utah. They are called Harmony Harvest and I’ve bought from the several times since we moved here. It’s not organic but the quality is good and price is really good plus we are supporting a mom and pop. After making the pie filling I made a cobbler right away.
I used mixed 1 cup of sugar, 1 cup of flour and 1 cup of milk. I added a tsp of baking powder and a 1/2 tsp of salt. It had a similar consistency to pancake batter. While I was doing that I preheated my oven to 350 and put my dish in the oven with a stick of butter.
Yes. A whole stick.
Once the oven was up to temp I took the dish out.
I poured the batter into the butter and didn’t stir
I added about three cups of the pie filling, again, not stirring
Then I baked for about an hour. I put a pan underneath my dish in the oven because it overflowed a bit. It’s done when a fork comes out clean in the batter
Tony said it was amazing. I’m sending the whole pan to work with him today.
Enough calories to require at least a 5 mile run
